AppHarvest is one in a new breed of huge indoor produce farms that use technology to fine-tune flavor, texture, and other attributes.

Hydroponic farms are growing crops with innovative technologies, including machine learning algorithms, data analytics, and proprietary software, in the absence of soil and growing seasons.

Daniel Malechuk and other executives at indoor farming produce company Kalera said the cost and growing cycle for hydroponic crops can be forecast precisely, and indoor farms can be built wherever people require fresh produce.

Irving Fain at U.S.-based vertical-farming company Bowery said, "what we are doing is reinventing the fresh-food supply chain."

The farms are engineered to produce clean crops without pesticides in hygienic buildings monitored by computers to avoid bacterial contamination.
